Just yesterday I pulled these wonderful bunching onions out of our home garden. After the flooding last year, which left most of the garden in ruin, I had given up hope that anything had survived. Due to the mild winter, these continued to grow into maturity without having been given any protection from frost and snow.  This is one of my favorite vegetables to add to a variety of meals.  Image

Having fresh vegetables at the beginning of Spring is something that we are very interested in pursuing on the farm. While we can’t expect the coming Winter to be like this past one, overwintering certain crops is possible, even in colder places than Pennsylvania.
